Kentucky Honey Paloma

Ingredients

  • 2 oz blanco tequila
  • 0.5 oz fresh lime juice
  • 0.5 oz honey syrup (Kentucky wildflower honey, cut 1:1 with warm water)
  • 3 oz grapefruit soda, or fresh grapefruit juice topped with soda water
  • Pinch of salt

Instructions

  1. 1

Add tequila, lime, honey syrup and a pinch of salt to a highball glass.

  2. 2

Stir briefly to combine before adding ice.

  3. 3

Fill with ice and top with grapefruit soda.

  4. 4

Lift gently with a bar spoon and garnish with a grapefruit twist.

Glassware & Garnish

Serve in a highball, garnished with grapefruit twist.

Editor's note: Kentucky wildflower and clover honeys are darker and more floral than commodity honey — worth seeking out at a farmers market, and worth cutting with water so it mixes cold.
